Katie had Crossfit this evening, and I had Running Club after lifting earlier this afternoon. We both worked hard today, so it was time to celebrate. I fired up the grill and seared a couple New York Strip buffalo steaks from Running Bare Ranch, a Bison farm in Springfield. Paired with some steamed peas and onions and a delicious Great Lakes brew, it’s the perfect meal to end a day of hard training.
Buffalo steak is really great stuff. I seared it for about 3 minutes, flipped, and 2 more minutes and it was a perfect medium rare. So tender and juicy, but still nicely lean! We have burgers to try out soon, too. Maybe I’ll top those with some cheese curds from Star Dancer…
